Packed with the goodness of matcha and a hearty dose of protein, these waffles might just be the best thing we’ve ever added to our morning routine.

Matcha is having a major moment. A finely ground powder of specially grown green tea leaves, it isn't just a trendy ingredient; it's a powerhouse of health benefits. Rich in antioxidants, matcha helps boost metabolism, enhance focus, and promote overall well-being. With its vibrant green hue, it adds not only colour but also a beautifully bitter note to your dishes. Incorporating matcha into your breakfast routine is a delicious way to start your day, adding in additional wellness benefits. The recipe uses our Matcha Latte blend which contains premium grade organic matcha from the blossom-laced shores of Japan.

Protein is often hailed as the building block of life, and for good reason. It plays a crucial role in repairing and building tissues, supporting muscle growth, and maintaining a healthy metabolism. For women, adequate protein intake is particularly important, as it can help support hormonal balance, boost satiety, support balanced blood sugar levels and preserve lean muscle mass. If you’re doing lots of exercise, or are pregnant or breastfeeding, focusing on your protein intake becomes even more important. Yet, many of us fall short on our protein goals, especially at breakfast. By incorporating protein-rich foods into your morning meal, you set yourself up for sustained energy and vitality throughout the day.

Recipe: Matcha Protein Waffles

Serves: 2 | Protein per Serve: 32.5g

Ingredients:

  • 1/4 cup almond flour
  • 1 full scoop protein powder (your choice of flavor)
  • 3 tsp Eve Matcha Latte blend
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup oat flour
  • 1.5 tbsp oil (coconut or avocado oil works well)
  • 180ml milk of choice (we used almond)
  • 1 egg
  • 1/2 ripe banana, mashed
  • 1 tsp vanilla extract

Instructions:

  1. In a mixing bowl, combine almond flour, protein powder, matcha powder, baking powder, salt, and oat flour. Mix until well combined.
  2. Add in the oil, milk, egg, mashed banana, and vanilla extract  and combine until smooth.
  3. Preheat your waffle iron and lightly grease if necessary.
  4. Pour the batter onto the preheated waffle iron, spreading it evenly. Close the lid and cook until golden brown and crispy. This took 6 minutes in our waffle iron, but will depend on your iron. Cook in batches if necessary until all the batter is used up. 
  5. Once cooked, carefully remove the waffles from the iron and place them on a plate.
  6. Serve the waffles warm, topped with a dollop of yogurt, a drizzle of maple syrup, your favorite fruits, and a sprinkle of matcha powder for an extra boost of flavor and antioxidants.
